I think you're a tad confused. Evolution doesn't do _anything_ an Exchange Server does. Evolution is a client program only.
Compare Evolution to Outlook.
Compare Exchange to HP OpenMail.
For what it's worth, I am a long-time Outlook user, and as far as Evolution goes, I've been involved with it long before you could download the program. Evo rocks. It's _better_ than Outlook, hands-down. Moving these folks to Evo would be a step up no matter how you slice it. HTML mail support isn't perfect, but you can't really expect it to be, when there's so much "MS garbage" in your typical HTML e-mail.
